THE GET-TOGETHER · 2015

It started at a family get-together.

In 2015, at a family get-together, Harry brought along some beer he'd brewed. Tom and Lawrence were impressed. Seriously impressed.

All three had studied engineering. Tom and Lawrence had gone into electronics manufacturing, Harry into safety equipment. Three engineers, one shared instinct for how things should be made. Tom and Lawrence started brewing together for fun, and within a year the fun had turned into a plan: how to make the passion their business.

So they asked Harry if he'd like to be involved. He quit his job and moved down two months later.

A NEW FOREST FAMILY BUSINESS · 2017

A shared love of making great beer.

Back in 2017, brothers Tom and Lawrence, together with their cousin Harry, all shared a love of making great beer – and a determination to turn their passion into their day job. Baynhams Brewery was founded, and their journey to create the best beer they could had begun.

They started on an old farm: converting a barn, buying their equipment, and developing their recipes. It wasn't until 2020 that they began brewing commercially.

Brewing in the heart of the New Forest, they created PIG BEER, a beer range and taproom that's grown into a popular destination to enjoy a truly locally brewed pint in welcoming surroundings.

A SPARKLING IDEA

Why couldn't a beer be shared like this?

At the time, the brewery was bottling sparkling wine for a neighbouring vineyard, and the family began to ask a simple question: why couldn't a beer be enjoyed and shared in the same way? They looked hard at the large-format beers already out there, saisons and lambics among them, and felt none of them truly bridged beer and wine.

Recipe development began in 2022, with several predecessor beers along the way. Brew after brew followed, at every scale: tasted, tested, adjusted, brewed again. After much careful, considered refinement, they were finally satisfied that they had created something truly extraordinary, and Chorus was born.
