A beer built for the table

Chorus Fine English Sparkling Beer has never behaved like an ordinary beer, and the people who cook and serve for a living are finding it does not pair like one either.

Brewed with Chardonnay yeast and fermented long and slow to 12% ABV, Chorus has always drawn comparisons to fine sparkling wine rather than traditional ale. Crisp acidity, fine bubbles, orchard fruit and a delicate biscuity finish make it a natural partner at the table.

Andy Bryant of The Box of Cheese paired Chorus with Dazel Ash, a soft goat's cheese recently crowned Supreme Champion at the British Cheese Awards. Jack Evans, sommelier at The Pig in the Forest, went straight to pork belly. Co-founder Tom Baynham has been developing pairings of his own since the beer was created.

Four pairings worth setting the table for:

  • Dazel Ash goat's cheese - crispness cutting cleanly through a citrusy, lactic tang, in the role usually reserved for a classic Blanc de Blancs Champagne.
  • Pork belly - acidity and breadth cutting through the richness, and the same again for porchetta, spiced pork belly and the crackling.
  • Seared scallops - the caramelised crust echoes the biscuity malt finish, while the bubbles cut through the butter.
  • Beef brisket - the fine carbonation works through the rendered fat much as a sharp condiment would.

Tom's one piece of advice on the brisket: skip a sweet glaze, as it risks overpowering the beer's residual sweetness.

"Chorus was never designed to be just another bottle in the fridge," says co-founder Tom Baynham. "We built it to sit on the table the way a good wine does, something that changes and elevates whatever you're eating alongside it. We have spent as much time talking to people who cook and serve for a living as we have to other brewers, and they keep arriving at the same conclusion independently of one another."

That table-first ambition shaped the beer: enough acidity to cut through fat, enough carbonation to cleanse the palate, and enough restraint on sweetness to sit alongside a savoury dish rather than compete with it. It is also why Chorus is served in a flute rather than a pint glass.
